G.S. could be George Smith (1835-1914), husband or father of Busy Bee I Smith [Central].

The initials could also refer George Freer Smith, third son of George and Isabella Smith.

Alternatively, they may refer to Gilbert Smith (1871-1934), son of David and Ann Smith and younger brother of Christine Smith [Central]. David Smith (1832-1893) was the younger brother of George Smith and the first of the large Smith family to migrate to Victoria.
